Sara’s Chocolate and Tahini Banana Bread

This indulgent, moist banana bread from one of our bakers, Sara, blends the richness of dark chocolate with the creamy, nutty flavour of tahini. Let us know if you try it by tagging us on your Instagram pictures!

Ingredients:

·      3 ripe bananas

·      100g light brown sugar

·      100g dark chocolate chips

·      240g plain flour

·      125g plain vegan yogurt

·      50g sunflower oil

·      16g baking powder

·      Pinch of salt

·      ½ tsp cinnamon

·      3 tbsp tahini

Method:

1.    Preheat your oven to 170°C (340°F). Line a loaf tin with parchment paper.

2.    In a large bowl, mash the ripe bananas with a fork until smooth.

3.    Stir in the vegan yogurt, light brown sugar, sunflower oil, and tahini until well combined.

4.    Sift in the plain flour and baking powder, then add the cinnamon and salt. Mix until just incorporated.

5.    Fold in the dark chocolate chips.

6.    Pour the mixture into the prepared tin and smooth the top.

7.    Bake for 35 minutes, or until a toothpick inserted into the centre comes out clean.

8.    Let the banana bread cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
