Hayleigh’s Vegan School Cake
Bring some nostalgia to your kitchen with this easy and delicious recipe by our head baker Hayleigh!
Ingredients:
· 500g self-raising flour
· 220g caster sugar
· 400g your plant milk of choice
· 120g neutral-tasting oil, like sunflower
· 80g golden syrup
· 1tsp baking powder
· 1tsp vanilla extract
For the icing:
· 250g icing sugar
· 35g water
· Sprinkles (optional)
Method:
1. Preheat the oven to 180°C.
2. Combine all dry ingredients in one bowl.
3. In a separate bowl, mix the wet ingredients.
4. Gradually combine wet and dry ingredients, mixing until just combined.
5. Pour into a parchment-lined baking tray and bake for 30 minutes or until cooked through.
6. Allow to cool completely. Top with icing made from icing sugar and water, then finish with sprinkles.
